NOVELLO IS HERE | 2020 | THE AUTUMN WINE PAR EXCELLENCE
AUTUMN HAS ARRIVED AND SO HAS OUR WINE NOVELLO.
Born in France in the 30's where it was known as “Beaujolais nouveau”,
it was later introduced in Italy where it became the autumn wine par excellence.
The distinctive feature of this type of wine
is the particular winemaking technique used to produce it,
namely carbonic maceration.
The grapes, harvested by hand, are deposited in a hermetically
sealed stainless steel winemaker saturated with carbon dioxide.
This process, which lasts for about 10 days, allows the grapes
to develop new aromas and flavours that are unusual in traditional wine.
Excellent with barley soups, mushrooms and tagliatelle with truffles.
Chestnuts recipes are its ideal pairing during this autumn.
