THE NOVELLO WINE 2019 HAS COME !
🍷Our Novello, available in the vinery from midnight on the 30th of October 2019, follows the tradition of the French Beaujolais Nouveau through the process of the 'MACERAZIONE CARBONICA'.
🍇It consists in filling a cistern with whole cluster grapes, saturated with carbon dioxide and then hermetically sealed, for a period of 15 days and an internal temperature of about 20 ° C.
🍷 Carbon dioxide, also produced by the grape itself that begins to ferment, fills the entire container, thus leading to a self-maceration inside the grapes.
🍇 Then a soft pressing of the whole grapes follows and the completion of the alcoholic and malo-lactic fermentation.
🍷In the end, with an alcohol content of around 12.5% vol, the wine is bottled, left to rest for a few days and here is the Novello ready to be tasted.
