WE’VE GOT NOVELLO 2018
Starting from October 30th, Novello 2018 is available in our winery. We’ve decided to produce it according to the French tradition of Beaujolais Nouveau because we think that in this way, it’s a great wine.
HOW WE DO OUR NOVELLO?
We decided to produce it always with the same grapes (50% REFOSCO D.P.R. and 50% CARMENERE) using the process of “CARBONIC MACERATION”, exactly like the Beaujolais Nouveau.
During its vinification, a tank is filled up with whole grape bunches, saturated with carbon dioxide and then hermetically loked for two weeks. The carbon dioxide, created also by the grapes fermentation, fills the container and the maceration starts.
The next step is a soft pressure of the whole grape and the wort, positioned in a big vat, finishes its alcoholic and malo-lactic fermentation.
At the end, when the alcoholic volume is about 12,5%, Novello is ready to be bottled and after few days ready to be drunken.
